Zha Guangjiao, also known as Zha Lajiao, is a traditional fermented food from southeastern Chongqing and other regions in China. Zha Guangjiao is an excellent side dish to go with rice.

It is made by finely chopping fresh red chili peppers, mixing them with salt and cornmeal (a few use sticky rice flour), and tightly sealing the mixture in jars.

Zha Guangjiao is resistant to storage and has a rich flavor. Only after being sealed in jars for 3 months does Zha Guangjiao develop its jar aroma. The color of the fermented product is slightly red or bright red. When just taken out of the jar, Zha Guangjiao is light yellow, and after cooking, it turns golden yellow or bright red.

Zha Guangjiao is often used as a base or accompaniment for stir-fried meat (twice-cooked pork, cured meat), steamed meat, steamed pork belly with preserved mustard greens, and grilled fish. Its sour and spicy flavor makes the meat refreshing and rich without being greasy, and renders it easy to digest and absorb.

In Sichuan and Chongqing, pork intestines are a true crowd favorite. The magic of red-braised intestines lies in their deep, intense flavor. Thoroughly cleaned and chopped into thick chunks, they are slow-simmered until tender and coated in a glossy, vibrant red sauce that instantly triggers the appetite.

Pick up a piece—the exterior carries a faint caramelized sear, while the inside remains pillowy soft with a satisfying, snappy bite. The natural savory richness of the intestines fuses seamlessly with chilies and fragrant spices, making every bite spicy and fragrant without feeling greasy.

Whether topping a bowl of street noodles, sizzling in a dry pot, or bubbling away in hot pots and skewer pots (Chuan Chuan Xiang), pork intestines are an indispensable hero of local cuisine.

In Tongnan, Chongqing, Tai'an Fish is better known locally as "Tuotuo Yu" (Chunky Fish). Its origins trace back to Waxuantuo in Tai'an Town, where the local bream was once served as a royal tribute. Local chefs eventually refined the traditional recipe, swapping the bream for accessible bighead or grass carp, chopping them into thick, hearty chunks, and cooking them with bold, intense flavors. As transport and dining boomed, Tai'an Fish quickly expanded beyond Tongnan to become an iconic staple of Chongqing's Jianghu (rustic/popular) cuisine. Today, Tai'an Town alone is home to over 20 fish eateries, packed at mealtimes with passing drivers and food lovers who travel just for a bite.

When visiting Chongqing, you simply cannot miss a vibrant, fragrant plate of Spicy Chicken! Crispy on the outside and tender on the inside, the chicken bites are deep-fried to a golden crisp, then wok-tossed over high heat with heaps of dried chilies and Sichuan peppercorns. Arriving glossy and highly aromatic at your table, it pairs perfectly with an ice-cold beer for the ultimate satisfaction!

In Chongqing, grabbing skewered hotpot—chuanchuan xiang—is never just about sitting down for a proper meal. It is a unspoken pact woven into the city’s working-class soul.

After a brutal day on your feet, completely wiped out, you pull out your phone and drop a text: "Old spot tonight, chuanchuan?" A instant "OK" flashes back on the screen, and half the fatigue vanishes right then and there.

When the gang gathers, nobody gives a damn about fancy plating or slick interior design. It is all about that bubbling, fiercely red-chili broth, beer chilled so cold it bites, and the unfiltered ease of squeezing close around a low table.

That night, the three of us crammed into a tiny roadside stall in the open air. The red oil bubbled furiously in the pot, while bamboo skewers bristled thickly from their metal rack. We talked, dipped, and ate—one skewer after another. By the time we called for the check, we had wiped out six hundred skewers. It wasn't that we possessed monstrous appetites; it was just that relaxed, unpretentious vibe that kept our hands and mouths moving on autopilot.

Cold beers were downed one after another. Lips burning, everyone yelled, "I can't take the spice!" yet hands remained stubbornly faithful, tossing more skewers into the roiling broth. We vented about toxic work drama, bitched about life's endless trivial headaches, and poked fun at college crushes that went spectacularly down in flames. Waves of laughter billowed up alongside the greasy steam, evaporating all the pent-up frustration of the day right into the night air.

Whether chuanchuan xiang counts as high gastronomy doesn't really matter.

What matters is that it gives everyone a bloody good excuse to get together. An excuse to see the people you actually care about, to spout the truths you bottle up daily, and to scald away a day's exhaustion in the thick, comforting smoke of the street market.

That, perhaps, is the true meaning of chuanchuan xiang to Chongqing folk—it is the rawest, most down-to-earth comfort found in the city’s midnight glow.

When Chongqing is mentioned, most people immediately picture a bubbling pot of hotpot. Yet true connoisseurs of the city’s culinary soul know that beyond the pool of red chili oil lies another iconic Jianghu (rustic/canteen-style) dish you simply can’t stop eating: Pepper Chicken (Jian Jiao Ji). With its bold, numbing spiciness and rich, fragrant aroma, it has long carved out an unshakeable place in Chongqing’s flavor-heavy food scene.

Though it seems straightforward and unpretentious, this dish actually demands precision in both ingredients and heat control. The chicken—typically tender thigh or breast meat—is diced into small cubes and thoroughly marinated. The peppers are the real crown jewel: only authentic local fresh green peppers will do, delivering a direct, fiery kick without drying out your throat. Tossed into hot oil on high heat alongside aromatic Sichuan peppercorns, old ginger, and garlic, the ingredients collide in a flash of heat. Perfectly cooked Pepper Chicken features meat that is lightly crisp on the outside, juicy on the inside, and coated in the intense fragrance of fried peppers and peppercorns.

Eating Pepper Chicken is a thrilling sensory journey. The initial bite hits you with a sharp wave of heat from the fresh peppers, quickly followed by the soothing, tingling sensation of Sichuan peppercorns spreading across your tongue. It’s thoroughly spicy, pleasantly numbing, and endlessly addictive as you hunt through the dish for every last piece.

In Chongqing, whether at a humble roadside food stall or a famous long-queue establishment, Pepper Chicken is a staple on almost every table. It has transcended being just a meal; it embodies the city’s spirit—bold, direct, and unpretentious. The sheer joy of hunting for chicken morsels among a mountain of vibrant green peppers and peppercorns perfectly reflects the generous, warmhearted nature of Chongqing locals.

Whether you are a first-time visitor or a seasoned food lover, a trip to Chongqing isn't complete without seeking out an authentic plate of Pepper Chicken.

On my very first day in Chongqing, a local friend dragged me straight into a scruffy hole-in-the-wall joint down an alleyway for what they promised was genuine Qianjiang Chicken Offal (Qianjiang Ji Za).

Honestly, the moment it hit the table, the black cast-iron skillet was bubbling with hot oil, releasing a steaming cloud of tangy, fiery aroma that hit me right in the face. Popping a piece of gizzard into my mouth, it was amazingly chewy and stir-fried until fragrant without a trace of gamey smell. The chicken intestines had a satisfying snap, while the liver was tender and fully infused with flavor. The absolute highlight, though, was the pickled radish and pickled chili peppers—tart enough to make your mouth water and fiery enough to give an addictive kick, pulling out all the savory richness of the offal.

At the bottom of the pan, potato wedges and lotus root slices soaked up every drop of spicy oil, softening up and getting richer as they simmered. This dish isn't just an elite rice topper; it is the ultimate bar snack. Taking a bite of that sour, spicy, crunchy offal and following it up with a swig of ice-cold beer is pure bliss. Despite my usual talk about going on a diet, I ladled three giant spoons of spicy broth over my rice and polished off three full bowls. My friend couldn't stop laughing: "You said you were watching your weight, but you ate more than me!" If you ever visit Chongqing, don't just stick to hot pot—this explosive skillet of sour and spicy offal will completely redefine your appetite and your drinking game.

At dining tables across the Sichuan-Chongqing region, the moment a plate of Suan Ni Bai Rou is served, its pungent yet irresistible aroma of roasted chili oil and raw garlic instantly makes your mouth water.

This classic cold dish may look simple, but it is the ultimate test of knife skills and seasoning. Premium pork belly (or upper rear leg cut) is boiled just until cooked through, then sliced while still warm into translucent, paper-thin ribbons and elegantly draped over a bed of shredded cucumber. The real knockout punch is the signature garlic chili oil dressing. Purple-skinned garlic is pounded into a fine, sticky paste, then vigorously mixed with toasted chili oil, spiced sweet soy sauce (fuzhi jiangyou), a splash of vinegar, and tingling Sichuan pepper oil. The result is a savory, sour, and mildly sweet spicy explosion anchored by a deep, robust garlic profile.

To eat it right, you must pick up a slice of pork, wrap it around the shredded cucumber underneath, and roll it generously through the brilliant red chili sauce. The first bite hits you with the aggressive, spicy numbness of the chili oil and garlic, immediately followed by the melt-in-your-mouth tenderness of the pork and the refreshing crunch of the cucumber. The rich aroma of the pork fat blooms on the palate, yet it doesn’t feel heavy or greasy in the slightest. Especially during the sweltering summer, pairing a plate of this with a simple bowl of steamed white rice is deeply satisfying and refreshing—undoubtedly the most addictive cold-dish knockout in Sichuan cuisine.

Wandering through the alleyways of Chongqing, beyond the overpowering aroma of hot pot, nothing tempts the senses quite like the sizzling plates of dried bean curd (Dou Gan) at street-side stalls.

This humble snack looks simple, but preparing it is a true craft. Grilled Dou Gan is all about heat control: slow-roasted over charcoal until the surface bubbles and turns crisp, then brushed with a rich layer of spicy chili oil and house-made sauce, topped with chopped green onions, minced fish mint (Zhe Er Gen), and pickled radish. One bite delivers a crispy exterior with a soft, chewy interior, unlocking layers of nutty soy fragrance and bold sauce. Swapped for the deep-fried version, it is pure indulgence—the bean curd puffs up golden crisp in bubbling oil, soaking up every bit of spicy chili flakes and signature sauce. Crispy on the outside and tender inside, every bite bursts with rich, savory oil, making it the perfect bar snack or street craving.

If you prefer something refreshing, the chilled, tossed version (Liang Ban) hits the spot. Thinly sliced strands or small cubes of bean curd are dressed in brilliant red chili oil, minced garlic, Baoning vinegar, and tingling Sichuan pepper oil, turning irresistibly vibrant. It strikes a balance of sour, spicy, and perfectly numbing flavors—cool and appetizing, making it the ultimate palate cleanser on a summer day. Whether you are a local commuting home after work or a traveler exploring the town, stopping by a tiny street cart for a cheap, hot, and delicious portion is the rawest, most comforting taste of everyday life in the Mountain City.
