Zha Guangjiao, also known as Zha Lajiao, is a traditional fermented food from southeastern Chongqing and other regions in China. Zha Guangjiao is an excellent side dish to go with rice.
It is made by finely chopping fresh red chili peppers, mixing them with salt and cornmeal (a few use sticky rice flour), and tightly sealing the mixture in jars.

Zha Guangjiao is resistant to storage and has a rich flavor. Only after being sealed in jars for 3 months does Zha Guangjiao develop its jar aroma. The color of the fermented product is slightly red or bright red. When just taken out of the jar, Zha Guangjiao is light yellow, and after cooking, it turns golden yellow or bright red.

Zha Guangjiao is often used as a base or accompaniment for stir-fried meat (twice-cooked pork, cured meat), steamed meat, steamed pork belly with preserved mustard greens, and grilled fish. Its sour and spicy flavor makes the meat refreshing and rich without being greasy, and renders it easy to digest and absorb.
